Unfortunately Send Email action have not such option.
Maybe it's necessary to add this. I wrote this into our ToDo.

How can I know when the recipient read my email?

You will receive the emal-notification about this.
But pay attention that it is unreliably. Very often users sets own email clients to ignore such requests.
