I would like the filemonitor action to store the path of the file that matches the watcher in a variable for later use.

You can do that - in the File Monitor settings, click the Save Changes tab and select the corresponding option. Then, in the List File Name edit box, specify for example {TempDir}\MyNewFiles.txt. You can download the sample task here and import it to the RoboTask.
